Bourbon Barrel: During the spring syrup harvest we are constantly tasting our fresh syrup to see if it has a specific flavor profile that is well suited for barrel aging (we are looking for notes of caramel). After the syrup has been deemed worthy of aging we procure freshly emptied casks from a local craft distillery, Wigle Whiskey from Pittsburgh PA. We use only 15 and 25 gallon barrels (not 53 gallon which are commonly used for barrel aging) to achieve the most complex and robust bourbon infusion possible.
Tasting notes: Notes of caramel & cinnamon, subtle yet sophisticated bourbon flavor in the finish. Â

Rye Whiskey Barrel Aged :
We start with our flavorful dark robust pure maple syrup and age it in empty Rye Whiskey barrels from Wigle Whiskey in Pittsburgh PA. The result is a delightful combination of robust maple flavor and the distinctive character of rye whiskey. Drizzle over fresh fruit, hot apple pie or vanilla ice cream.
Rum Barrel:(NOT AVAILABLE UNTIL NOV 2022)
We age our finest grade A Dark Robust flavored pure maple syrup for 7 months in Rum barrels imported from Jamaica’s Appleton Estates. Mellow, yet sophisticated.
Enjoy over pancakes or waffles, drizzle over fresh apple pie or sharp cheddar for a sweet and savory snack. Delicious as a glaze on grilled salmon or chicken. I like a tablespoon in my morning coffee. The possibilities are endless!
